Soulful Butter Cheese Cupcake


Ingredients:

250g Cream cheese (i use Philadelphia cream cheese)
250g butter, softened
2 1/4 cups self-raising flour, shifted
1 1/2 cup caster sugar
1/3 cup milk
3 eggs
1tsp vanilla essence
1tsp nutmeg

Method:

1. Preheat oven at 180c.
2. Beat butter, sugar and vanilla in an electric mixer until light and fluffy.
3. Beat in eggs, one at a time until well combined the follow by the cream cheese.
4. Lower the speed at low add in milk and flour and mix until smooth. (do not over-mixed)
5. Spoon mixture into a greased muffin tin or 22cm round tin.
6. Bake a 180c for 60 - 70min (for round tin) or 40 - 50min (for muffin tin)
7. Allow to cool slightly before removing from tin.

Tips : you can add some cherry berry (about 350g) in after step #4.
