Soulful Butter Cake
My daddy Soulful Butter Cake recipe.
Just had a butter cake recipe request from my good friend yesterday.
This is a very simple and yet yummy cake recipe that i 'inherit' from my dad. Dad doesn't bake a lot but whenever he bakes his will usually use this recipe and each time turn out well.
Note: This cake is more on the dry side as in high density, go with coffee is the best option because it can be choky if eating too fast .
Ingredients:
250g butter / margarine (dad prefer margarine but i still prefer to aroma of butter and the texture is much different)
250g caster sugar
5 large eggs (if using smaller eggs may be use up to 6 or 7 eggs)
250g self-raising flour
Method:
1. Preheat oven at about 170C to 180C (depending on your oven, adjust accordingly during baking)
2. Put the butter and sugar into a large mixing bowl mix until smooth like a thick cream form.
3. Add in egg one at a time and keep mixing.Once the mixture is well mixed (no more traces of egg). Shift in self-raising flour little by little and fold in so that the mixture won't become lumpy.
4. Pour the cake mixture into baking pan or tin and bake for about 45min (use the skewer to test if the cake is ready)
My apology because i am using a very old oven the functionality might be slightly different from yours, but most importantly the ingredients are well mixed and it will definitely turn out great.
