Soulful Crustless Baked Cheesecake

I tried this cheesecake and hooked to it, asked the recipe from my friend and finally i got it baked successfully.
It is really hard to come across any crustless cheesecake recipe online. I am glad that i got this from her.

This is a simple and easy to make cheesecake recipe.

Ingredients:

675g cream cheese
250g sugar (If you find it too sweet, reduce a little)
6 eggs

Method:

1. Preheat oven at about 180c to 200c (adjust according to your oven type)
2. Beat all the above ingredients in a mixing bowl until well blend.
3. Grease the baking pan /springform pan with a little bit of butter.
4. Pour the mixture into the baking pan and bake for about 45mins to 1hr. (check with skewer until it comes out clean)
5. Leave cool with door ajar.
6. Once it is cooled refrigerate for at least 2hrs before it is served.

Ingredients:

carrot
celery stalk
broccolli
Enoki mushroom
Tofu
1 tsp miso paste
1 tsp salt

Method:

1. Add carrot, celery, Enoki mushroom into a pot of boiling water.
2. When the carrot and celery softened, add tofu and broccolli in.
3. Scope out a laddle of soup onto a bowl, add in miso paste in the bowl and dissolve it.
4. Remove the pot from heat and add in the dissolved miso paste in.
5. Serve

*note: never boil miso under heat.

Soulful Garlic Ginger Steamed Fish

Too much unhealthy food lately, it's time for some light and non greasy or cheesy food ;)

Bought this very cheap fish from market (cheap because it is uncleaned),it took me awhile to get it totally cleaned.
Ingredients:

1 fish of your choice
4 cloves chopped garlic
3 tbsp chopped ginger
1/4 cup coriander leaf (i used celery leaf)
1/2 cup sliced chinese mushroom
1 tbsp fish sauce
1 tsp sesame oil.
1 dash of white pepper
1 tsp soy sauce

Method:
1. Put fish on the steam tray add all the ingredients in top of the fish except the coriander leaf.
2. Steam for 15min (depending on how big is your fish, always check with a fork until the flesh deteched from the bone)
3. Serve by sprinkle coriander leaf on top.

Usually i make the creamed corn soup with seafood but this time i twist the recipe a bit i use chicken instead and added some brocollies as well, served it with bread, yum yum ;)

Soulful Chicken Parmigiana / Parmesan Chicken
This recipe is a real great recipe but due to my own fault it didn't turn out to be what i wanted it to be but the tast is so so great though, trust me it is really good, feel like having more.
My faults were :
1) Was suppose to let it bake for longer time but I was in the hurry so it looks too moist.
2) The pasta sauce not suppose to cover up to the edge of the chicken.

Soulful Prawn Chee Cheong Fun - Yum Cha / Dim Sum

This is the plain Chee Cheong Fun that i made

This Prawn Chee Cheong Fun might not look appealing but it took me a lot of hard work to get it done as i don't have proper appliances to steam the batter, but my ' never say die' spirit kept me going (i was about to give up) because the recipe that i had not really that accurate i reckon, but thank God for some wisdom i added in more water and it become translucent it tastes just like the Chee Cheong Fun that we have for our Dim Sum (or they call it Yum Cha in Australia), the only thing that different is mine is not as moist as those in the Dim Sum shop because i don't have a big steamer or 'big wok' .

As this is the version that i made after the damage control, thus, i won't share this recipe, i will try another time with different recipe then i will post it accordingly.

Soul Recipe - Baked Cheese & Vege Rice





Was quite struggling on what to cook as i have successfully cleared 90% + of the stock in the fridge (meat cleared 100%), the only thing still left are some grated cheese, Mozzarella cheese and some capsicum and Broccoli....

Soulful Butter Cake

My daddy Soulful Butter Cake recipe.

Just had a butter cake recipe request from my good friend yesterday.

This is a very simple and yet yummy cake recipe that i 'inherit' from my dad. Dad doesn't bake a lot but whenever he bakes his will usually use this recipe and each time turn out well.

Note: This cake is more on the dry side as in high density, go with coffee is the best option because it can be choky if eating too fast .

Ingredients:

250g butter / margarine (dad prefer margarine but i still prefer to aroma of butter and the texture is much different)
250g caster sugar
5 large eggs (if using smaller eggs may be use up to 6 or 7 eggs)
250g self-raising flour


Method:

1. Preheat oven at about 170C to 180C (depending on your oven, adjust accordingly during baking)
2. Put the butter and sugar into a large mixing bowl mix until smooth like a thick cream form.
3. Add in egg one at a time and keep mixing.Once the mixture is well mixed (no more traces of egg). Shift in self-raising flour little by little and fold in so that the mixture won't become lumpy.
4. Pour the cake mixture into baking pan or tin and bake for about 45min (use the skewer to test if the cake is ready)

My apology because i am using a very old oven the functionality might be slightly different from yours, but most importantly the ingredients are well mixed and it will definitely turn out great.

Soulful Chocolate Pecan Brownies






Soulful Chocolate Pecan Brownies – a real “sinfully & heavenly” taste.


Ingredients:

Brownie mixture
1 cup chopped pecan nuts
200g butter
150g dark cooking chocolate
3 eggs
1 tsp vanilla essence
1 cup brown sugar
1/2 cup self-raising flour
1/4 plain flour / all purpose flour
1/4 cup cocoa powder

Chocolate glazing
100g dark cooking chocolate
100g butter
2tbsp of sugar (adjust according to your preferred sweetness)

Method:

1. Preheat oven at about 170C.
2. Line a layer of baking sheet on a baking tray and spread the pecan nut over and bake for 10mins in the oven then set aside to cool.
3. Place butter and dark chocolate into a heatproof bowl, and sit over a saucepan of simmering water. Stir mixture occasionally, until melted and smooth. Remove from heat and set to cool.
4. Beat eggs and sugar in a large mixing bowl until light and foamy (about 3mins to 5mins).
5. Add the chocolate mixture and vanilla and beat briefly to combine.
6. Sift flours and cocoa powder over bowl and fold in.
7. Fold in the toasted pecan nuts.
8. Pour the brownie mixture into the prepared baking tin and bake for 45mins to 1hr. (depending on what type of oven you are using, check every now and then with skewer to make sure that it is well cooked).
9. Cool in the pan then refrigerate for 4hrs, until firm.
10. Lift out and cut into small squares to serve.

Chocolate glazing
1. Melt the chocoate glzaing ingredients in double boiler and mix with wooden spoon.
2. Spoon over the small square brownies and serve.

Banana Cake / Bread

Tried out another Banana Cake Recipe but i still prefer the previous recipe that i used because the other recipe is more moist, this one is very dry, i kinda struggle to finish it ( i love banana cake that is why you will notice i have many recipes are made of bananas.) Don’t think i will use this recipe again. (But some people like this type of dry texture for banana cake) i reckon this tastes more like bread than cake :(

Brilliant Home Remedy To Keep Out Flies

Very often especially during summer when you cook your yummy food some of our ‘unwanted buddies” = flies will start to have party around our yummy food, that is the most annoying thing that can ever happen. Friend forward me an email on tip to keep away from all these nasty little flies without using any chemical product.

Here's the home remedy and it works like charm


Half fill zip bag with water and put in a few pennies and zipped shut it and pin the baggies to post or wall.

No one yet knows how or why it works, but there is speculation that it has something to do with the way the moving water refracts light.

Another research found that each of the millions of molecules of water presents its own prism effect and given that flies have a lot of eyes, to them it's like a zillion disco balls reflecting light, colors and movement in a dizzying manner. When you figure that flies are basically prey for many other bugs, animals, birds, etc., they simply won't take the risk of being around that much perceived action.
