Soulful Chicken Nuggets

Nuggets is always a great snack for kids or for any kind of parties, personally i love nuggets very much but getting from the fast food outlet is quite pricey, so i decided to try this out on my own.
Voila! here is the version of my invention.

Soulful Chicken Nuggets

Ingredients:

skinless chicken breast cut into bite size
2 eggs
1 tbs milk
About 1/3 cup plain flour
About 1 1/2 cups finely ground breadcrumbs (i use my homemade breadcrumbs by grinding the days old bread)
About 2 cups oil, for deep frying (you might need more if you are using big skillet,it is recommended to use a smaller skillet in order to use lesser oil)

Method:

1. Marinate the bite size chicken breast with a little bit of salt for about 30min to 1hr and leave in the fridge.
2. Whisk eggs and milk together in a bowl.
3. Coat the chicken pieces in flour and shake to remove excess follow by dipping the chicken into the egg and milk mixture make sure the flour is well coated by the egg and milk mixture.
4. Then coat the chicken pieces in breadcrumbs, pressing firmly to ensure crumbs well adhered.
5. Heat some oil in a skillet/wok over medium-high heat, deep fry the chicken until golden brown and cooked through.
6. Drain the fried chicken on paper towel.
7. Serve with some dips/ chilies or tomato sauce.

Soulful Chocolate Chips Walnut Butter Cake

Soulful Chocolate Chips Walnut Butter Cupcake

This is a real good idea for Christmas party and other functions.
This is actually from my dad's butter cake recipe that i posted previously, i just add some chocolate chips and chopped walnut into it and use the cupcake baking tray.

It turned out lovely, if you want you can decorate it with some colourful butter cream, i don't like butter cream that is why i just leave it "naked". I love the buttery flavor.

Soulful Chicken Parmigiana

Soulful Chicken Parmigiana

This is my second attempt on Chicken Parmi, this time i use my own homemade tomato paste ;)

Tomato Sauce
1 tbs olive oil
1/2 medium peeled onion, finely chopped
2 large peeled and crushed garlic cloves
400g tomatoes (can crushed/diced)
1/2 teaspoon mixed herbs
1 1/2 teaspoons brown sugar, firmly packed
Salt and pepper to taste

Crumbed Chicken
400g skinless chicken breast
2 eggs
1 tbs milk
About 1/3 cup plain flour
About 1 1/2 cups breadcrumbs (i use my homemade breadcrumbs by grinding the days old bread)
About 1/2 cup oil, for frying

Cheese Topping

1/2 cup grated tasty cheddar cheese
1/4 cup grated parmesan cheese

Method:

For Tomato sauce

2. Add onion and garlic and cook, stirring occasionally, for about 5 minutes, until onion has softened but not browned.
3. Add tomatoes, mixed herbs and brown sugar, increase heat and bring to the boil. Once boiling, reduce heat and simmer for about 35-40 mins, stirring occasionally, until sauce has reached the desired thickness.
4. Add salt and pepper to taste. Set aside for 10 minutes.
5. Blend the puree sauce in a blender or food processor.

For Crumbed Chicken
1. Cut the chicken breast into half horizontally.

3. Coat one piece of chicken in flour and shake to remove excess follow by dipping the chicken into the egg and milk mixture make sure the flour is well coated by the egg and milk mixture.
4. Then coat the chicken in breadcrumbs, pressing firmly to ensure crumbs well adhered. Do the same to the rest of the chicken breast.
5. Now is to fry the chicken, heat some of the oil in a heavy-based frying pan over medium-high heat, fry the chicken in a single layer, without overcrowding the pan, until golden brown and cooked through. (depending on how big the size is your skillet, you will probably need to do it in a few batches.)
6. Drain the fried chicken on paper towel.

To bake
1. Pre-heat oven at 180 to 200C
2. Place the fried chicken in a large baking dish and spread with sauce and sprinkle with combined cheeses.(do not spread the sauce and cheese up to the edge of the chicken, make sure you leave about a 5mm of the edge to give allowance for the cheese to melt)
3. Bake at for about 15-20 minutes, or until cheese is melted and golden.
4. Sprinkle the chicken parmigiana with chopped parsley before serving.

Soulful Green Curry Chicken

Have been really busy or rather lazy to update this blog :( but now i am back!

This Green Curry Chicken looks a little bit different from the normal Green Curry because i added a lot of vegetables in this recipe.

Here you go the Soulful Green Curry Chicken recipe.

Ingredients:

200g chicken - de-boned and cut into bite size (breast or thigh is the best option)
100 to 200g of vegetable of your choice (i used eggplant, green capsicum and red cabbage in this recipe)

50g Green curry paste (i use MAE PLOY brand)
2 tbsp oil

1 cup of coconut milk and another 1/2 cup to add in different time (all in 1 1/2 cups)
1 1/2 tbsp sugar (add more if you find it too spicy)
1/2 cup water

As always my recipes are very forgiving, you can adjust whatever you like according to your own preferred taste.

Method:

1. Heat the wok / skillet / pan, add in oil and green curry paste and stir fry it for about 2mins.
2. Add in 1 cup of coconut milk.
3. Add in chicken and continue cooking.
4. Add in another 1/2 cup of coconut milk and 1/2 cup water heat until boiling.
5. Add in the vegetable and cook until the vegetable soften.
6. Add sugar to taste.
7. Serve with steamed white rice.

Note: The green curry paste itself is very salty and super spicy. Adjust according to your taste, if you want a milder spiciness reduce the curry paste to about half.

My faults were :
1) Was suppose to let it bake for longer time but I was in the hurry so it looks too moist.
2) The pasta sauce not suppose to cover up to the edge of the chicken.
