Christmas Coconut & What Chocolate Mud Cake
Ingredients:
Cake mixture
200g butter
180g white chocolate
3/4 cup sour cream
1 cup caster sugar
2 eggs, lightly beaten
1tsp vanilla essence
1cup plain flour
1cup self-raising flour
1/2 cup shredded coconut
Apricot Filling
800g apricot halves
2tbsp lemon juice
1 cup caster sugar
Icing
125g softened butter
3/4 cup pure icing sugar
125g melted white chocolate
Method:
1. Preheat oven at 160C. Grease and line baking pan with non-stick baking paper.
2. Heat butter, chocolate sour cream and sugar in a saucepan, stirring until melted and well combined. set aside to cool for 10mins. Add in eggs and vanilla and mix well.
3. Shift both flours into large bowl. Add coconut, then 1/4 of chocolate mixture and stir until smooth. Continue to add chocoate mixture 1/4 at a time until the mixture is well combined.
4. Pour into the prepared baking pan and bake for 1hr or until a skewe inserted comes out clean.
5. Cool in pan for 10min, transfer to a wire rack.
6. Now prepare the Apricot filling, Combine apricots and lemon juice in a large microwave proof bowl. Microwave on high for 5mins. Add sugar, stir and cook for 5mins more. Remove and stir. Cook for another 5mins Refrigerate until cold.
7. Now the Icing, Beat butter and icing sugar with the electric mixer until pale and creamy. Stir in melted chocolate until well combined.
8. Split cake. Spread a little icing and apricot filling over base. Sandwich cake halves together. Spread icing over top and sides of cake.
9. Refrigerate for at least 2hrs until firm.
